Large-format aging allows this organic, native-yeast fermented Nebbiolo to evolve with exceptional grace, revealing a savory profile bursting with intense aromas of wild strawberries, tart pomegranate, spiced black tea, and balsamic herbs underpinned by vertical acidity and fine-grained, persistent tannins.
Food Pairing: Pairs flawlessly with pan-seared duck breast with a cherry reduction, slow-cooked wild boar ragù, herb-crusted rack of lamb, or mature Parmigiano-Reggiano.
