The Story

A magnificent Northern Italian red wine displaying a bright, translucent ruby red color with sophisticated garnet reflections along the rim. Masterfully crafted by the historic Pasquero-Elia family at their ancient Paitin estate—who have farmed these revered slopes since 1796—this exceptional expression comes from organically managed old Nebbiolo vines rooted in the prestigious Serraboella MGA (Menzione Geografica Aggiuntiva) of Neive. Sourced from choice parcels featuring complex marly limestone and stratified sandstone soils, the wine undergoes long maceration using the traditional submerged-cap technique followed by extended aging in large Slavonian oak casks. The highly expressive, multi-layered nose opens with a soaring bouquet of wild red currants, tart cherries, and raspberry compote. The complex nose is beautifully supported by regional characteristics of fresh violets, rose tea, dried mint, iron, and a sophisticated touch of sweet liquorice and camphor. On the palate, it balances a structural, medium-to-full-bodied red fruit core and a vibrant, linear alpine acidity with compact, chalky tannins that display reserved power, concluding in an incredibly long, detailed, and savory finish defined by a distinct streak of oyster-shell salinity and warming earthiness.

Food Pairing: Pairs flawlessly with slow-braised beef shanks, traditional Piedmontese tajarin with shaved truffles, roasted duck breast, or aged hard cheeses.
