The Story

A magnificent Northern Italian red wine that breaks tradition by applying the appassimento method—drying the grapes on racks for six weeks prior to pressing—to the naturally high-acid Barbera grape. Displaying an intense, deep ruby red color, the highly complex nose opens with an incredibly rich, concentrated bouquet of dark cherries, dried plums, and fig jam, masterfully layered with sophisticated notes of cocoa powder, sweet baking spices, hand-rolled tobacco, and subtle savory underbrush. On the full-bodied and velvety palate, it balances its dense, opulent core of dried red fruits and the grape's signature vibrant acidity with a remarkably smooth, plush mouthfeel. Vinified entirely in stainless steel with absolutely no oak contact to preserve its intense varietal purity, it finishes exceptionally long, harmonious, and persistent.

Food Pairing: Pairs flawlessly with rich pasta dishes like baked lasagna or pappardelle with sausage ragù, slow-braised beef brisket, savory stews, and aged hard cheeses. Alternatively, it serves as an excellent meditation wine alongside a rich chocolate cake.
