Made from 100% organically grown old-vine Macabeo grapes, the juice undergoes one week of gentle skin-contact maceration before finishing fermentation in a combination of stainless steel and concrete tanks. It pours a beautiful, clear pale amber and lifts with an aromatic, candied bouquet of tangerines, melon, and wildflowers, balanced by a nicely grippy tannic structure, refreshing mineral acidity, and a crisp, bone-dry finish.
Food Pairing: This texturally complex and savory skin-contact wine pairs exceptionally well with spicy Southeast Asian curries, grilled sea bass, pork carnitas, or nutty, hard cheeses.
