The Story

A magnificent Southern Italian natural red wine displaying a vibrant, deep ruby-purple hue with glowing crimson edges. Masterfully crafted by the eccentric cult-favorite winemaker Gabrio Bini alongside his son Giotto at their isolated Azienda Agricola Serragghia estate on the wild volcanic island of Pantelleria, this incredibly rare "Onda" expression—named after Gabrio's beloved dog—presents a fascinating regional anomaly: it is a 100% expression of pure Syrah, a grape rarely cultivated on this wind-swept Mediterranean island. Sourced from small, high-altitude terraced parcels with mineral-dense volcanic soils, the grapes are tended purely by hand and horse before undergoing an unadulterated transformation. Spontaneously fermented with indigenous wild yeasts, the wine is aged in ancient terracotta amphorae buried deep within the vineyard soils, then bottled completely unfined, unfiltered, and entirely free of added sulfur. The highly expressive, exotic nose bursts open with a soaring bouquet of wild dark blackberries, crushed black cherries, and ripe plums. The complex nose is beautifully supported by regional characteristics of pungent wild Mediterranean scrub, rosemary, ground white and black pepper, and an intense, atmospheric volcanic salinity. On the palate, it balances a structural, medium-to-full-bodied dark fruit core and a vibrant, linear marine acidity with smooth, wonderfully silky skin tannins, concluding in an exceptionally long, dry, and detailed finish wrapped in a streak of savory, herbal complexity and crushed stone brine.

Food Pairing: Pairs flawlessly with slow-roasted lamb shoulder with rosemary, grilled venison loin, duck breast ragù, or rich Mediterranean eggplant and tomato stews.
