The Story
Miro Pine Mountain Reserve Cabernet Sauvignon is an exceptional, small-production mountain-grown California red wine masterfully crafted by acclaimed winemaker Miroslav "Miro" Tcholakov. Sourced from high-elevation vineyards perched at approximately 2,600 feet above the sea level near the top of Pine Mountain, the fruit benefits from a unique microclimate above the valley fog line. This intense elevation subjects the vines to a prominent temperature inversion, extending sunlight exposure and prompting a slower ripening process that develops remarkably thick skins and rich phenolic concentration. In the glass, the wine presents an intense, opaque dark ruby hue. The aromatic bouquet is profoundly expressive, revealing layered notes of dark plums, ripe black cherries, and wild mountain blackberries, harmoniously accompanied by complex nuances of sweet baking spices, graphite, wet gravel minerality, and toasty oak. On the palate, it is full-bodied, robust, and beautifully balanced, offering a rich core of concentrated dark fruit seamless structured by velvety, mountain-driven tannins and a vibrant, refreshing acidity that culminates in a long, layered, and sophisticated finish.
Food Pairing:
Pairs beautifully with dry-aged ribeye steaks, herb-crusted lamb chops, roasted venison medallions, braised beef short ribs, wild mushroom truffle risotto, and aged gouda.
