The Story

Domaine Paul Jaboulet Aîné Domaine de Thalabert Mule Blanche is an exceptional, organically and biodynamically farmed white wine produced from old vines situated in the heart of the historic Crozes-Hermitage appellation. A traditional, beautifully balanced blend of Marsanne and Roussanne, it pours a brilliant pale straw-gold color with delicate green highlights. The expressive and highly aromatic bouquet unfurls inviting notes of fresh orchard apples, white peaches, juicy melon, and preserved lemons, complexly layered with nuanced undertones of white flowers, ginger, wild honey, and toasted brioche. On the palate, the wine is medium-to-full-bodied and texturally rich, showing off a round, satin-like mouthfeel balanced impeccably by a crisp, steel-like natural acidity and fine, subtle phenolic bitterness reminiscent of white tea. A deep, succulent core of white stone fruit and citrus oil moves gracefully across the palate, leading into a long, persistent, and beautifully focused finish defined by a clean, stony, and saline mineral edge.

Food Pairing: Pairs beautifully with pan-seared sea bass, grilled scallops, roasted chicken breast in cream sauce, veal medallions, and creamy goat cheese.
