Distilled in 2004 from molasses using column stills at the Rum Co. of Fiji, this spirit underwent a magnificent 20-year maturation journey. It spent its first 17 years aging tropically in ex-bourbon casks in Fiji before journeying to France for 2 years of continental aging in Ferrand cognac casks. It was then masterfully finished for an additional year in rare Japanese Umeshu (plum liqueur) casks. On the nose, it offers a rich, deep bouquet centered around plum, sweet caramel, nutmeg, and long pepper. The palate reveals an intriguing umami balance of sweet and tart, delivering intricate layers of prune, banana, coconut, vanilla, and dark chocolate, all complemented by subtle smoky cedar. The finish is long, luscious, and beautifully nuanced with notes of cocoa, roasted nuts, and toffee.
