Eau Claire Distillery Single Malt Whisky Batch 8 is a premium, farm-to-glass Canadian single malt crafted in small batches in Turner Valley, Alberta. Groundbreaking with tradition, Eau Claire raises its own barley from seed, using old-world horse farming methods alongside new-world craft distilling techniques. Matured high in the rare prairie mountain air, Batch 008 is aged separately in hand-selected ex-bourbon and Oloroso sherry casks. This unique dual-cask maturation lends a remarkable depth of grain-forward character, masterfully balancing youthfully fresh prairie sweetness with rich, mature sherry wood complexity.
Food Pairing: Glazed pork belly bites, warm pecan tarts, roasted duck with fruit reduction, or aged white Cheddar.
TASTING NOTES - Rich copper and amber in appearance. It features a full-bodied, smooth, and beautifully textured mouthfeel that coats the palate with an oily and warming richness.
NOSE - Warm barley malt, honeycomb, and baked apple lead the way, supported by oak shavings, vanilla, soft caramel, grassy fields, and raisins with subtle notes of dried citrus peel.
PALATE - Smooth and rounded with rich flavors of sweet malt, toffee, and ripe orchard fruits, giving way on the mid-palate to vanilla bean, dried fruit compote, and gentle spices like cinnamon, nutmeg, and a touch of white pepper.
FINISH - Medium-long and warming with lingering notes of honeyed grain, toasted coconut, walnut, cocoa powder, and a touch of dried orange and oak.
SERVE - Best served neat or with a few drops of pure water at room temperature in a Glencairn glass to allow the complex prairie grain and sherry cask layers to unfurl.
