The Story
Decoy Limited Paso Robles Cabernet Sauvignon 2023 is a rich, energetic, and beautifully structured red wine that brilliantly showcases the signature power and richness of California's Central Coast. Sourced from select premier vineyard sites across Paso Robles, including the estate's own properties, this vintage benefited from a long growing season that fostered ideal flavor concentration and balanced natural acidity. Following careful vinification, the wine was meticulously aged for 16 months in French oak barrels (40% new) to refine its tannins and impart layered complexity. In the glass, it presents a dense, dark ruby color with bright clarity. The highly aromatic nose opens with intense scents of concentrated black cherry, marionberry, and cassis, seamlessly woven with nuanced accents of lavender, cocoa powder, roasted coffee, and toasted cedar. On the palate, the wine is full-bodied, supple, and rich, demonstrating an engaging, fruit-driven fluid coherence where its core of lush blackberry and dark forest fruits is effortlessly supported by silky, fine-grained tannins and an enlivening acidity. A touch of savory earthiness adds characteristic depth, carrying the wine into a long, smooth finish highlighted by subtle notes of vanilla, warm baking spices, and elegant wood oak.
Food Pairing:
Pairs beautifully with grilled ribeye steak, slow-braised short ribs, smoky barbecue beef brisket, and mature extra-sharp white cheddar cheese.
