The Story
Bardstown Goose Island Stout Cask Bourbon is an exceptional limited-release expression from Bardstown Bourbon Company's celebrated Collaborative Series. This innovative whiskey represents a masterclass in blending and cask finishing, bringing together Kentucky's premier modern distillery and Chicago's legendary Goose Island Beer Company. The blend consists of 6- and 7-year-old high-rye Kentucky bourbons that were aged an additional 12 months in freshly emptied Bourbon County Stout barrels. To achieve perfect harmony, an older, classic 9-year-old bourbon is married into the final blend, resulting in an incredibly decadent, complex, and robust spirit that beautifully bridges the gap between premium bourbon and world-class craft stout.
Food Pairing: The deep, roasted notes of this bourbon make it a fantastic companion for dark chocolate truffles, a rich crème brûlée, or espresso-rubbed pork chops. It also pairs wonderfully with savory smoked brisket or a well-aged Gouda cheese.
TASTING NOTES - A deep, rich amber liquid with dark mahogany undertones. It features a moderate heft and an oily, lightly slick texture that pleasantly coats the glass and the palate.
NOSE - Intensely decadent and enveloping. The aroma leads with rich dark chocolate, roasted malt, and honey, followed by notes of toasted almond, vanilla cream, dried cherry, and subtle toasted oak.
PALATE - Rich, bold, and malty. Initial waves of brown sugar and sweet toffee quickly give way to darker, deeper flavors of dark chocolate, roasted cacao, and black cherry. Mid-palate undertones of roasted coffee beans and baking spices gracefully meld with classic bourbon sweetness.
FINISH - Long, warming, and incredibly balanced. It leaves a lingering trail of roasted stout characteristics, oak spice, and echoes of bitter cocoa that slowly fade into a dry, malty close.
SERVE - Best enjoyed neat in a Glencairn glass to fully appreciate the complex interplay between the bourbon and the stout finish, or poured over a single large ice cube to soften the proof and accentuate its chocolate and cherry notes.
